Kurt Melle CEC, the South Plains Chapter of the Texas Chefs
Association, and Llano Winery created the fantasia to raise money for the
Chefs Scholarship Fund and Parkinson's charities. The event also
provides chefs, cooks, restaurateurs, and amateur cluinarians with an outlet
for participating in the community-style chocolate competition.
The Fantasia will take place on Saturday, January 28, 2006.
Competitors may begin setting up at 2:00 p.m., judging is at 4:00 p.m., and
the event will officially open to the public from 6:30 pm to 8:30 p.m.
The event will be set up much like Lubbock's Cork and Fork Affair, with
patrons enjoying all of the chocolate they care to eat and all the wine they
care to drink for one admission price.
The major component or flavor of an entry should be
chocolate. Llano is featuring their dessert wines at this event, so
the entry is requested to adequately represent a dessert theme. Each
sized portions for amateurs and students, and 120 portions for professional
and chef categories. Any contestant may prepare more than the
requirement of the sample-sized portions; however, each entry will be
restricted to four feet of table space (one-half of an eight-foot banquet
table). The showpiece can be portioned for guests after judging.
Each entry is requested to have a representative present during the event to
serve the product, and promote the establishment of individual and answer
questions.
The Llano wine and Chocolate Fantasia was initiated in order
to promote interaction among culinarians, foster alliances for students,
give culinarians and aspiring culinarians in the South Plains area the
opportunity to gain experience in a competitive setting, and expose the
public to an original event which they will not soon forget. The
decision of the judges will be regarded as final. Everyone who shows
well will be considered a winner. Rapid and substantial growth has
been a hallmark of the Fantasia, but establishing a winning tradition for
the individual or restaurant is still encouraged this year.
We at Llano Estacado Winery and the South Plains Chapter TCA
are very excited about the Fantasia and are looking forward to your decision
to participate with us in what has become one of Lubbock's elite culinary
competitions.
